2008 Sophie’s Bridge Shiraz

Fruit for the 2008 Sophie’s Bridge Shiraz came off low yielding, mature cooler climate vineyards in the Central Tablelands of NSW. These mature vines have produced a wine with great balance, length and fruit intensity.
Aroma Dark cherry, raspberry and plum fruit dominate the nose with hints of white pepper and spicy oak.
Palate These flavours carry onto the palate and integrate nicely with the soft, supple savoury tannins.
Winemaking process
The grapes were cold soaked for 2 days to gently extract flavour and colour from the skins prior to fermentation in small stainless fermenters. The ferment was allowed to reach 27°C before finishing the remainder of the ferment at 22°C. A portion of the wine was matured in 1-3 year old American and French oak Barriques for 8 months.
Food Match
This full flavoured medium bodied red wine will suit robust red meat dishes such as Osso Bucco or roast beef.
