Cellar Whilst drinking well now, it will continue to develop delicious bottle age characters until at least 2012.

First produced in 1963 from Semillon grapes grown on our Short Flat vineyard, Vat 1 is fermented in temperature controlled stainless steel tanks and then quietly spends a few years ‘resting’ in bottles. Released after 5 years of bottle age, Vat 1 is a classic example of aged Hunter Semillon. Arguably Australia’s finest Semillon, Vat 1 epitomises the benefits of patient bottle ageing that transforms this unoaked wine into a masterpiece.
