Winemaking The 2007 Airlie Bank Cabernet Sauvignon Merlot is produced from 100% Yarra Valley fruit. The grapes were de-stemmed and crushed into static fermenters. After approximately 10 days on skins the wine was pressed and racked to barrel. Maturation took place in new and seasoned French oak barrels for 12 months
Colour Youthful, vibrant purple/red colour
Bouquet Lifted aromas of blackcurrants, liquorice, plums and tobacco.
Palate A medium bodied wine with soft integrated tannins and subtle oak. Varietal flavours of plum, blueberry and herbs.
Cellaring This wine will develop further complexity over the next six years.
Food Match An ideal wine with char-grilled lamb or beef.
In the 1850’s Airlie Bank was the original name of Melbourne’s Punt Road Hill. This property was owned by a Scottish lawyer called David Ogilvy who named the property after Airlie Castle in Scotland, the spiritual home of the Ogilvy clan. Ogilvy planted a vineyard on the banks of the hill stretching down to the Yarra River. According to the history books the wines made on this site were “celebrated” by the local community.
These days the vineyards are long gone and Airlie Bank is prime real estate within walking distance of Melbourne’s CBD.The vineyards are now located in the cool climate of the picturesque Yarra Valley.
