Aroma Lifted ripe plums and red cherry fruit with an underlying hint of mint and white pepper from the French oak.
Palate A ripe palate of plums, quince and red cherry fruits, soft and full flavoured yet elegantly interwoven with a layer of dusty French oak. The palate has a real fleshy mid-palate structure and silky, earthy spice giving the wine a delicious savoury texture which will reward cellaring over the short to mid term.

Cellar 5 - 8 years
Winemaking The grapes were destalked (separating berries from the bunch) and placed uncrushed into small stainless steel open fermenters. A cultured yeast was used to start the fermentation and the tanks were hand plunged spending 5 days on skins at 28° C. All of this encouraged maximum extraction yet retaining the rich fleshy midpalate structure that is the hallmark of good quality Merlot. The skins were gently pressed in the JLB Vaslin Bucher press and the wine spent 16 months in a mixture of new and 3 & 4 year old French oak hogsheads (300l).
