Ivory is a classic blend of Semillon and Sauvignon Blanc from premium growers and estate-grown fruit.  The 2011 vintage was a warm, dry and very short
season for the whites that enabled the production of a wine of exemplary varietal purity and freshness. Clean, cold ferments were  integral in harnessing
the freshness  and vibrancy of both varieties, while  extended lees contact on  select parcels provides texture and depth.

Alcohol 12.8%, pH 3.3, TA 6.5 g/L, residual sugar 2.2 g/L
 
TASTING NOTES
Colour  Very pale in colour with green hues.

Aroma   A lifted nose exhibiting passionfruit, guava and lime blossom.  

Palate   Intense citrus  flavours abound on the palate, with a deftly intertwined lacing of  herbaceous crunch  adding complexity. A  zesty  and refreshing  acid backbone provides structure and length.   
 
CELLARING  Best enjoyed in the first two years from vintage so as to capture the  freshness and vibrancy of
the wine.
