Vintage 2011
Aroma The nose is characterised by the lifted floral notes of musk and summer fruit
Palate Has a great natural fruit sweetness. The slight natural effervescence is refreshing and cleansing, with fruit notes of lime and pineapple with a clean zesty finish.
Winemaking Picked early in the morning, the fruit was delivered cool to the winery. Gentle pressing to minimise phenolics and cold settling preceded a long, cool fermentation averaging 12°C. The fermentation was left to run its course over 14 days leaving a naturally sweet, vibrant wine. A touch of spritz is detectable on the palate from the residual carbon dioxide which was harnessed and bottled to retain both fruit vibrancy and freshness.
