Vintage 2005

Region The 2005 Limestone Coast Cabernet is sourced from Coonawarra, Mount Benson and Mount Gambier wine regions.
 
Winemaking
The wine is a blend of Cabernet Sauvignon with 7% Merlot from our own Mount Benson property and 4% Petit Verdot from the cold Mount Gambier region.  It was then matured in French and American oak for 2 years before bottling.
 
The Wine
The wine is classic Cabernet with the distinctive black currant or cassis and berry fruit characters identified with the Limestone Coast wine region.  The Merlot and Petit Verdot add complexity and extra dimension to both the aroma and flavours of the wine.
 
Bouquet The wine is ripe rich and full  with the aromas of blackberry, mulberries and cassis.

Palate The flavours are fruit driven with a richness and strong berry characters that flow to a strong middle palate and acidity. The wine has great length and a background of charry oak and fine tannins on the finish.
 
Food match The wine is a great food wine with is strong fruit flavours, acidity and fine grainy tannins.

Cellar It will gain character and soften with bottle ageing. We recommend 3 to 5 years.
